Saca 2023. It is always a pleasure tasting this beauty that demonstrates ultimate complexity and length. While it shows tanginess from the sourdough bread yeast, there is also something very bright and zesty, almost like dried oranges. Be prepared to embrace the powerful impact of oxidative notes of walnuts, toffee and caramel, which tend to overwhelm, and rightfully so, with touches of roasted sweet potatoes, cocoa powder and salted seaweed. The freshness has very little to do with its acidity, but rather is from all the flavors through its lengthy biological and oxidative aging. Concentrated, dry and incredibly long with a salty tang that lingers with the round, ultra-complex finish. Goes on for minutes. I’m not spitting. This is sheer hedonism, yet with so much depth. A wine for thinkers. Drink now.
