The NV Extra Brut Rosé Premiere Cuvée bristles with energy. It has the effusive charm to drink well as an aperitif but also the backbone to work well at the dinner table with lighter foods. I especially admire the balance here. Crushed raspberry, chalk, mint and white pepper linger. Disgorged: October, 2020.

Fragrant notes of ripe yellow apple and oyster shell are an aromatic thread, layered with apricot, candied pink grapefruit zest and toast point flavors in this elegant rosé Champagne. A fine example of the aperitif style with its lacy texture and firm spine of racy acidity. Pinot Noir and Chardonnay. Disgorged October 2020. Drink now. 5,000 cases made, 200 cases imported.

Disgorged in April 2021, the latest rendition of Paillard's NV Extra-Brut Rosé Première Cuvée offers up attractive aromas of crisp stone fruits, red berries and hints of warm biscuits. Medium to full-bodied, seamless and pillowy, it's an ample, elegant Champagne that's fine-boned and precise. I suspect it will show even better with another year or two on cork.
