Made from Basque spring water blended with hand-picked and sun-dried organic lemongrass from Sri Lanka, the slightly milky, lime-green shimmering NV Pét-Nat Tea BI Lemon Grass opens with a tart bouquet reminiscent of Pale Ale, fermenting yeast and, of course, fresh lime juice, somehow Frisian. Slightly sweet, round and mouth-filling but less refined than the Sencha BAT, this is a smooth pét-nat that seems a bit animalistic on the finish, which unfortunately also reminds me of soft soap, but that may be due to its youth (it was bottled in May 2021 and tasted in October 2021). The mousse is delicate and elegant and the finish quite structured but quite sweet. It's best enjoyed cold (at a maximum of nine degrees Celsius) with, for example, shellfish, grilled fish and citrus or lactic-based desserts. 1.5% alcohol. Crown cork. 260 bottles were filled of lot L 552020. This is bottle no. 116.
